We asked Drizzling Delicacies to share a recipe with us and we got a no-bake, hassle-free dessert that is surprisingly light and gelatine-free! Without further ado, let’s get on with making Mini Chocolate Cheesecakes.

(Makes 2)

½ cup chocolate cookies (crumbled)

2 tsp butter (melted)

1 cup fresh cottage cheese

1 tsp hung curd

2 tbsp sugar (powdered)

2 tsp cocoa powder

Chocolate Sauce

1 ½ tsp butter

2 tsp cocoa powder

2 tsp sugar (powdered)

3 tsp water


  • Line a muffin tray with 2 paper cups which will act as a base for the Cheesecake.
  • Add melted butter to the cookie crumble and mix well. Cover your paper cups with the mixture so that it takes the shape of a bowl and place it in the refrigerator.

  • Add cottage cheese and hung curd in a mixer grinder. Give it a whiz to make a paste. Add fresh cream if required. Then mix in powdered sugar and cocoa powder.

  • Take out the base from the refrigerator and with the help of a piping bag swirl the cheese mixture onto the base.
  • Top it up with chocolate sauce. (To make the Chocolate Sauce, combine all the ingredients in a non-stick pan and heat for about a minute. Then keep aside to cool) Keep in the refrigerator to chill.

This is a quick recipe which can be eaten as a snack anytime of the day. It is very easy to prepare and takes no time at all. All you need is a few ingredients and you are good to go.

(Serves-4, Preparation Time – 5 minutes, Cooking Time – 10 minutes)


1 medium-sized Cauliflower

Refined oil for frying

For the batter

2 tbsp All-purpose flour

1 tbsp Corn flour

1 tsp Cumin seeds

1 tsp Mustard seeds

1 tsp Red Chilli flakes

½ tsp Baking Powder

½ tsp freshly ground Black Pepper

½ tsp turmeric powder

Salt to taste

  • Take a bowl and mix all the ingredients of the batter. Add water to form a smooth batter. It should coat the spoon completely.
  • Heat oil in a wok on a medium flame. While the oil is heating up, wash the cauliflower properly. Cut it into bite size florets. Add them into the batter and coat well.
  • Add the florets one by one into the oil and deep fry until golden brown and crisp. Place them on a self absorbing paper. Sprinkle some Raw Mango Powder/ salt/ pepper and serve hot with chutney of your choice.

It’s almost New Year – a time to celebrate.  And no celebration is complete without delightful treats !! Speaking of treats, Pizza has always been one of my favourites. This time though, I wanted to try making Pizza from scratch. So I decided to give it a new look. I tried them for the first time and they turned out quite nice. It’s something which I’d make and eat again and again and again !

I would love to take this opportunity and share this recipe with you all. The recipe is as follows:

Pizza Cups (Makes: 7, Preparation Time: 1 hour, Cooking time: 30 minutes)

For the base

1 Cup Refined Flour

1 tsp Yeast Powder

1 tsp Sugar

1/8 cup lukewarm water

½ teaspoon Salt

1 tbsp Refined Oil


  • Take lukewarm water and add yeast powder and sugar to it. Sprinkle a little refined flour over the mixture. Set it aside for a while to activate.
  • In the meantime mix salt with your Refined Flour.
  • When the yeast rises, add it to the flour and knead it into a soft dough by adding water. Also keep adding refined oil little by little to the dough. Cover it with a moist muslin cloth and let it rest in a warm place until your dough doubles in size. Best place is to keep it in the microwave. It usually takes about 40 minutes for it to double in size.
  • Take it out and knead it again slightly and let it rest for 15-20 minutes.
  • Now, sprinkle some refined flour on a flat surface and with the help of a rolling pin roll the dough and cut in into 7 small circles. They  should be about 3-5 mm thick.

Tip: Do not use hot water for the yeast otherwise it will die and will be of no use.

For the Sauce

2 finely chopped tomatoes

1 finely chopped onion

3-4 cloves of finely chopped garlic

1 deseeded green chilli finely chopped

1 tbsp tomato ketchup

½ tsp sugar

1 tbsp Olive Oil

Salt to taste


  • Heat oil in a pan.
  • Add in garlic, onion and green chilli. Sauté, until onions become soft and transparent. You can add a little salt to quicken the process.
  • Next, add in chopped tomatoes, sugar and tomato ketchup. Cook until tomatoes soften up.

For the Filling

1 chopped Tomato (Remove the centre so that you don’t have a gooey filling)

1 chopped Onion

1 chopped Capsicum

3-4 sliced Olives

Mozzarella Cheese


  • Add tomato, onion and capsicum in a bowl along with grated Mozzarella Cheese and mix well. (You can substitute this with a filling of your choice)

For the Pizza Cups

  • Pre-heat the oven at 200 degrees centigrade for 10 minutes.
  • Prepare the muffin tray. Brush it well with Olive Oil (So that the crust becomes crisp).
  • Place the dough circles as shown in the picture above.
  • With the help of a spoon spread your sauce all around the base and place the filling.
  • Top it with some more Mozzarella Cheese and Sliced Olives.
  • Place it in the oven for 15-20 minutes at 250 degrees centigrade and serve.

I was thinking of something new and unique to cook, when my friend suggested that I make “MAGGI PAKODAS”. That tweaked my interest and I wanted to try them out immediately. I must say this recipe is so easy and fun to prepare and absolutely delectable. I thought I’d share this recipe with you. So, here goes.


( Serves 4, Preparation Time 5 minutes, Cooking Time 10 minutes )

1 packet Nestle Maggi

1 extra packet Maggi masala(Tastemaker)

Oil for frying

 For Batter

4 tbsp Gram flour (Besan)

1 Medium sized Onion (julienne)

3-4 sprigs Coriander leaves (finely chopped)

1 tsp Cumin seeds

1 tsp Green chilli paste

1/2 tsp Turmeric powder

1 pinch Asafoetida

1 tsp Chaat masala

Salt to taste

  • STEP 1 – Cook Maggi as usual along with extra tastemaker and keep aside. Make sure the Maggi is relatively dry. Heat oil in a pan to fry.
  • STEP 2 – While the oil is heating up we shall prepare the batter.  Add all the ingredients under batter in gram flour and make a smooth batter. Make sure there are no lumps. If you feel extra gram flour is required add accordingly. The batter should be able to coat the Maggi properly.
  • STEP 3 – Add salt to taste keeping in mind Maggi also has salt in it. Add Maggi into the prepared batter.
  • STEP 4 – Take spoonful portions and put it into the oil to fry until golden brown or crisp. Fry pakodas on medium flame. Place them on absorbent paper to soak excess oil. Sprinkle chaat masala and serve these lip-smacking pakodas with your favorite chutney and ENJOY it with your loved ones.
